Before writing my new Cookbook Nook Mystery series, I was lucky enough to write the nationally bestselling A Cheese Shop Mystery series. For nearly two years on Mystery Lovers Kitchen—the blog in which I participate with other authors who love to cook up crime—I did a weekly blog that included cheese. It’s not that hard. There are plenty of recipes out there with cheese in them. I learned so much while doing so. I also learned to “add” cheese to lots of recipes.

Changing up recipes is one of the most fu
n things to me in cooking. I need to eat gluten-free, and gluten-free pie crusts are hard to make. They don’t hold together as well as regular wheat flour crusts. But that doesn’t make me stop wanting pie – my all time favorite dessert. So I devised an apple pie, this one using a premade bottom shell crust, and adding cheese as the top crust. It turned out delicious!!

APPLE PIE WITH CHEESE CRUST

Ingredients:

7-8 Pippin apples, peeled and sliced thin
1/2 cup brown sugar
1/4 cup white sugar
1/4 cup sweet rice flour (or regular rice flour or regular flour for those who can eat it)
Pinch of ginger
Pinch of nutmeg
1 tsp. cinnamon
1 lemon, juiced and seeds removed
1 gluten-free pie shell (Whole Foods* is my favorite, there are others; regular gluten eaters can use a regular shell!!)
1 1/2 Tbsp. butter, diced
4 ounces Edam cheese, diced or grated

Directions:

Preheat oven to 450 degrees.

Peel and slice apples.  This will give you loosely 8 cups of apple slices (figure 1 cup per apple).  Add sugars, rice flour or regular flour, spices.  Stir.

Squeeze the lemon juice over all and toss again.
Layer into the pie shell, making sure you get apples to the edges. 

Dot with butter.

Sprinkle evenly with the diced/grated cheese.

Set in oven on a tray that will catch any of the juice spilling over. Bake 35 minutes until cheese is nicely browned.

Let sit 20 minutes before slicing.

May be served with another wedge of cheese or vanilla ice cream.

  2. I actually have two favorite pies. As Angela says CHEESECAKE is one of them, but mine are Junior's (tm) Cheesecake from Brooklyn.

    The other is a 3 fruit pie (blueberry, cherry, pineapple).

    1. Kiki, love pumpkin pie. Can you tell I'm a pie person? Thanksgiving is always a welcome time of the year. I'm not sure if I've ever had pumpkin pie when it wasn't a holiday! But I adore it. For breakfast, too. :)
