I practically eat nothing but fish...but the best is fish and chips...and a batter made with milk and flour for me but salmon cakes are great too...

ReplyDeleteWe use those outdoor deep fryers in the summer to fry fish and whatever else we want to fry for our meal. It makes those fish so tasty! I know, I know, not quite so good for you. But, yum!

Looking forward to reading Linda's book so much. We live in MA and get fresh fish easily but when our children were growing up, they could not tolerate the odor of fish being deep fried at home, so we always went out each Friday for our fried haddock. To this day, we always go out for fried foods even though our children are adults and on their own now. But I do cook lots of seafood at home, mostly shrimp and lobster. I know that shrimp is not considered fish as such but this is an easy recipe that I got from a restaurant in NC over ten years ago and it is one of the quickest dishes to make. I add my own touches to it too, as this is just a basic recipe but the way many want it to be. Simple......
ReplyDeleteSHRIMP CARBONARA
10-12 oz. peeled and deveined shrimp
3 Tablespoons olive oil
¼ cup grated Parmesan cheese
4 slices bacon
¼ cup sun dried tomatoes
mushrooms (optional)
onions (optional)
1/3 cup heavy cream
1 extra large egg
your favorite cooked pasta
Sauté bacon and sun dried tomatoes in olive oil. Add onions and shrimp, and cook three minutes. Add mushrooms and cream. Heat to boil. Add pasta. Stir until heated through. Turn off heat. Sprinkle cheese on top of mixture. Whip egg vigorously. While stirring mixture, slowly pour n egg and continue to mix. Be careful not to scramble egg. Divide onto plates and top with additional grated cheese.
Serves two.

I make a casserole of salmon and peas in a white sauce. Cracker crumbs are spread on top. My daughter loves it too - so I make it when she is coming. I also love salmon cakes - salmon, egg, and some mashed potato for binding. Fried with some catsup on them - wonderful.

Not a fish eater, although I like some shellfish such as shrimp and lobster. I love shrimp cocktail Especially with a fairly hot cocktail sauce. Thanks for the giveaway.
